Temperature varies greatly with LED current, quality of interface between LEd and heatsink, and mass of heatsink. But the heatsink shouldn't ever be over 60˚C or thereabouts.
But the heatsink isn't going to be very helpful if it's not in contact with something to carry the heat away. (think airflow)
