In the past I've always used whatever I had, most times a discount stone of unknown quality or origin. So couple questions

1. Best general use or two sided stone for home use?
2. Best general use stone for travelling that can be shaped? I would like to
cut, or have it cut to fit inside the little storage area on the Esee HEST.

Look at the DC3 and DC4 sharpening stones from Fallkniven.

They both are double sided: one side is ceramic and the other is diamond to achieve the perfect sharpening.
The DC4 is the bigger version of the DC3.

They are not very expensive and work really well!

I really like boride stones myself. They work fast and leave a beautiful finish.

If you're open to other forms of sharpening, I highly recommend a strop to finish your knives with. I use 2 strops myself: a coarse strop to touch up fairly dull blade and fresh-off-the-stone knives, and a fine strop to put a hair-whittling edge on them.

For home use I'm open to most anything.

Looking for something that will fit into the hests handle while I'm on the road. Looks like I can remove some of the micarta material if need be to make a bit more room. Maybe epoxy the stone to one of the handles.
