Aside from keeping the solderpoints from shorting out due to water, do they technically require any further protection? i.e. does it cause any harmful problems if, say, a 5050 is run while it's wet? Am wondering what the minimum required protection is, if any.

I've seen descriptions which make them sound incredibly fragile: you shouldn't even touch them on the surface, and only handle them with tweezers from the edges. Not sure why that is, but it seems somehow related?

as a general rule, electronics are not designed to be exposed to any sort of moisture. Some can handle a quick wash to remove solder flux, but that's about the limit. Consult with the manufacturer of your components for an authoritative answer.
