Yea that guy is from my hometown. Howe is where I grew up. His last name is familiar but I have been gone from there for 15 years. Lake Texoma is some GOOD fishing for sure!

I never liked flatheads. Channel cats are great tasting. I catch bullhead cats here down at the park. a smaller catfish but when caught in clean waters the flesh is nice and creamy. Good catfish. I caught two stringers full last time I went down there. They overpopulate the pond so it doesn't hurt to take so many sometimes.

If you get the flathead try cutting out the glittery flesh when cleaning them. From what I am told this is the fatty tissue and it doesn't taste good.

I've heard the larger/older cats don't taste as good. The 1.5-3lb cats are supposed to be the best.

The fat is where all the nastiness gets stored...hehe. Young fish taste better because they haven't been around as long as the older ones...so they haven't had the time to build up all that nastiness in their fat.
