Sound Sensing Light?

My wife is a speech therapist. She needs a simple, non-computer peripheral device that will give positive feedback when a set dB level is heard.

Would prefer prefab but can do some assembly i.e. I could attach components together but I do not have experience in assembling pc boards.

Would be willing to learn when $ gets too high (<$50.00, I have to pay for it, LSU is out of money, and I can't stop buying those little flashlights that I "already have enough of"

Does this seem doable for a novice like myself?
Any ideas for adjusting sensitivity of the mike--needs to be fairly easy to adjust i.e. volume knob on a radio?
An LED needs to light up when set audio level is reached.

I'm a little rusty with electronics right now, but that looks to be more than just a simple sound activated triggering circuit. I would say that schematic will vary the signal in proportion to the sound level (higher DB = brighter light, lower DB = dimmer light)
