Butter and Bread and Sandwiches Oh My! (II)

instead of pudding snack packs i uses the jello mix for the first time it was dang good a bit sweet but good.
 
So I made chicken Marsala... kind of.

A week ago I bought some mushrooms, and chicken with the plan of making chicken marsala.
Last night I took out the ingredients.
The chicken was fine.
The mushrooms smelled a bit funky, and they got tossed.
The heavy cream was to be replaced with Half and Half. It was three weeks past its due date and got drained into the sink.

So I fried the "Montreal Chicken" seasoned, chicken in butter.
I added some Marsala wine, and sauteed it a bit; then to thicken it a bit, added some coconut flour.
So I made some Marsala chicken, with a touch of coconut, sans mushrooms, and sans cream, over boil in bag brown rice. It wasn't disappointing.

About 30 years ago, I stopped by a guy's house while his wife was away on vacation. I kid you not, he was eating his dinner from a can while holding it over the kitchen sink. Never before or since have I witnessed such a sad partaking of an evening meal. :(

I'm not going to lie. Cooking for one, is not satisfying. I do need to get back into it, though, because my diet is not too good.

That would have been a good time to go out to a nice, inexpensive diner.... or, just the nearest fast-food joint.

I do need to get back into it, though, because my diet is not too good.
If in a simular situation, I'd cook for three a few times a week and freeze the leftovers. However, doing so still wouldn't be satisfying.

It's not good for a man to be alone. But it's better than being miserable with a quarrelsome woman.

Yeah, cooking and freezing is the plan. I have perhaps 10 pieces of Rubbermaid that are ideal for that. So far only one set is in the freezer. I gotta start working on that plan :)
 
Winn Dixie here has turkey breast for 99 a pound I stayed up all night to go get some when store opens it will go fast now it's to cold to ride my motorcycle lol I lost my jacket I'll find it but it will be to late but damn that's a deal
