Help Support CPF:

Hhhhhmmm, let's check with the Grilled Cheese Consortium before we go too far.

......

They just got back with me. They're OK with melting cheese on toast in an air fryer. However, we'll have to change the name. They didn't offer any suggestions and are free to use whatever we like as long as it isn't "grilled cheese".

Apparently it's a union thing or something.

But it should be OK if it's cooked on a korean style wire mesh grill, right?

Picked up two new additions to the cookware, at the local department store. Ought to improve the cooking options.

0.5qt Cocottes -- mini Dutch Ovens, cast iron enameled, + lids:

7.5qt Dutch Oven -- cast iron enameled, + lid:

The little ones ought to handle small quiches, omelets and other serving-sized baked dishes, smaller baked recipes with a filling and a "crust" that bakes-up over and around the filling, shepherd's pie individual servings. Cast iron, so they ought to hold the heat fairly well. Heavy suckers, despite their size. This recipe looks like a decent one to try -- French Onion Soup.

The big one ought to do well with roasts, soups, lasagna, tomato sauce, big corn bread. This one's a pig. But it'll work where the porcelain 9x13 baking dish won't. Will have to try a decent pork shoulder or lamb, cooked very low and slow of course, sometime this winter.

Soup -- Beef stock, lots of fresh seasonal vegetables (tomatoes, parsnip, carrot, green beans, poblano pepper, red bell pepper, habanero pepper, serrano pepper, opo yellow squash), onions, garlic, beans, tempeh*, grilled turkey sausage, collard greens.

Herb mix, in a sachet -- Fresh rosemary, sage, thyme, tarragon, and lots of it. The soup ended up very herby.

Spice blend used in the soup -- Herbes de Provence, fennel, cumin, coriander, mustard, dill, Szechuan pepper, red pepper flakes, all freshly ground, plus paprika, sumac, and dried fenugreek (methi) leaves.

*The tempeh is a blend from Trader Joe's -- soy beans, rice, barley, millet.

The soup's pretty healthy, and hearty. Didn't make my own stock from scratch, this time around, but I will next time.

The new cast iron enameled Dutch Oven is a winner. Great, even heat, with no scalding/staining, and it's easily cleaned. Love it.

FULL YUM Chance

People underestimate what a good bun can do ^^^^^^^^^^^^^^^
those look alot like a local brand called Fuzzies*, they will transform a burger, BLT, sandwich, double brat, you name it.
for years they were the bun used at a local A&W

*must have been the owners nickname😃

Learning new sauces would be an awesome wish! I'm learning that once you catch the hang of a basic few, the rest are just variations of the theme.

Wouldn't it? "Nailing" all of the basic sauces, and developing a couple of amazing personal recipes based on those foundational sauces.

I'll have to do a bit of reading. And then hit up my expert-cook nearby neighbor who can make almost anything. She was essentially classically trained, in her younger years, with oodles of relatives who all had been classically trained.
