Cooked steak tonight. Of course I added ketchup because I'm a caveman

Filet with roasted garlic, mushrooms and caramelized onions

I can only get this caramelized in a heavy cast iron pan. I've tried several times with other pans and just can't get to this color without burning.

Onions cooked for probably 45 mins or so. Maybe an hour.

Here's when you can call it done but you know there's another level. This is prob 20 mins in.

Busted out the whetstones…I was quickly reminded how much longer it takes over machine sharpening

That's a good channel.

I can get good results but not superb results.

It shaves hair effortlessly but doesn't slice through phone book paper with that unique sound a super sharp blade makes slicing through phone book paper. I can get that slicing sharp with my paper wheels, just not with a whetstone.

The folks getting superb results the entire length of the edge by hand either have a job that relies on sharp edges or they have a ton of experience.

Higher quality stones also give a feedback that's easier to detect versus cheaper stones. Chosera stones are easier to use because of the feel…the ones in the pic are a grade below Chosera.

Our annual memorial day cook out was down to two folks this year.

Toss in a blackened hot dog.... on butter bread toasted on the grill and some wavy potato chips.

My neighbor brought over a little Thank You gift, for picking up the road kill that landed on her front lawn.
Empanadas !

I added a little sour cream, and some Pineapple mango salsa.
Delicious.

@Poppy, I've seen empanadas filled with everything from tuna to tripe, and always plenty of cheese. Baked is healthier but fried taste so goood!
I'm afraid to ask, what was the road kill 😁

@knucklegary , I think it was loaded with beef. I also think it was baked but my daughter disagrees, and is certain that it was fried. IMO it wasn't oily enough to have been fried.

Last year the road kill was a ground hog, this year a cat without a collar.

Unfortunately I left it in a plastic bag instead of dragging it home and putting it in my trash. That night a skunk got into it, and I needed to collect it again. Stinky.

How about two 1/3rd lb burgers, with Kraft American cheese (I suppose that it is really cheese food) but it tastes great and melts even better. Topped with a couple of slices of "bread and butter" pickles, on potato rolls. The burgers were seasoned with Grill Mates Montreal steak seasoning.
Accompanied by some sauteed eggplant, onions, green and yellow squash, and some canned baked beans.

It's time to switch to skinless boneless thighs on the grill.

Gently pound them out to make them somewhat uniform in thickness.
olive oil both sides, and transfer them to the grill set at medium heat, skin side down.
At 5-7 minutes, when the bumpy side shows signs of turning white, flip them.
brush on some Sweet Baby Ray's BBQ Sauce, and let it caramelize for a few minutes.
Flip them again, and brush the other side. When it is all caramelized, check it for temp 165F.
