Cell capacity matching for packs

I am building some AA and D cell battery packs. I have tested each cell to get capacity so I can build packs with matching cell capacity. I have 200 Maha 2700 cells that have ranges from 2490 to 2600. What would be a good range to assemble packs +- ma ? Packs are 10 cells.

I would group like this...

2565 - 2600 mAh
2525 - 2564 mAh and
2490 - 2524 mAh.

if you get the real numbers I would just sort them into order e.g. take the 10 best then the next 10 etc.... Only drawback is that you know the first pack and the last pack are a good bit different.

I d let them rest for one week, then measure them again.
Kick the onesout, that already went too low.
