I was reading some info on the supplier site and I was reading that the Cree MCE Max Current is 700ma but then i read the info on the recommended driver HipFlex and its lowest drive current is 1000ma,
SO how does this work?
I plan on running 3 MC-E's in parrallel what would i need to set at to drive these LED at max?

Whats the difference in running LED's in Series and in Parallel???
I know the wiring difference but what will be the performance difference?
I was told that i would need to run the 3 MC-E's in Parallel using my 14.8v LiPo 4000mah
And whats more recommended?

That's 700mA per die. If the LED is wired on the star in parallel, that's 2.8A @ ~3.5v. If it's series, that's 700mA @ ~14V.
 
There are 3 different ways that the MC-E wired, because its a combination of 4 separate cree dies. The 4 dies can be wired as follow

4s - all 4 dies are wired in series with a max of 700ma at 14.8v
or
2s2p - 2 in series and 2 parallel with a max of 1400ma at 7.4v
or
4p - all 4 dies wired in parallel with a max of 2800ma at 3.7v


For powering 3 MC-Es in parallel if the MC-E is wired in
4s - you need 2100ma at 14.8v
2s2p - 4200ma at 7.4v
4p - 8400ma at 3.7v

I take that you are talking about 3 MC-Es wired in series and connected to the driver in parallel then you need 2100ma at 14.8v.

You should check with wayne at taskled.com about the hipflex on how to connect the MC-Es with that driver, as far as i know the hipflex is meant to drive 1 or more MC-E with the 4 dies connected in parallel (2800ma at 3.7v) then the MC-Es should be connected to the hipflex in series.
