Portable Work Desk for Vehicle(s)

Anyone here use their vehicle as an office on the road? What do you use? There's this product called EasyDesk. I'm looking for something that's easy to take down or store out of the way when in my truck.

I was thinking like a laptop stand double as a desk that can be installed on the passenger side so you can still have access to your steering wheel and be unobstructed?

I looked and am still looking into the RAM Mounts, JottoDesk, and Pro Desks series. They look sturdy enough, but have not seen any up close and personal to try them out to see if these can be easily put aside for easy access.
