Most common LEDs will be suffering & dying by the time they hit a die temperature of 85°C and stay there for awhile, though a few kinds can be taken higher.
Personally, I'd prefer to keep them below 60°C or so for a good, long, healthy life.
An ordinary 5mm LED that becomes very noticeably warm to the touch after 5 minutes (35-40°C) is probably closer to 65-70°C (or even a bit more) inside where it matters.
I don't yet know enough about Luxeons or other large junction devices to tell you what's going on in there when the outside starts to heat up; though a MCPCB temperature of around 60°C on a LS LED (unshielded/unmodified/no additional sinking) is around the upper safety limit for those.
