Rear clicky Mag switch?

The concept is fairly simple. Electricity flows in a circle (simplified). The switch interrupts that circle.

The circle in this case is from through the battery, then the switch, then the bulb to the flashlight body to the tailcap to the spring which touches the other end of the battery. The circle is broken by operating the switch.

So when you take out the switch, you replace it with a piece of wire. But then the light is always on. So you put a piece of plastic between the tailcap spring and the tailcap, and install a switch there that, when activated, connects the spring to the tailcap.

That's about it, ignoring the details of getting all the sizes right, making spacers and getting good connections.
