Where were these guys some fifty odd years ago when I slept in a 40' x 40' x 8' compartment on a "Tin Can" with 60+ other swabbies after a week of bar-b-qew beans for breakfast, bean soup for lunch and red beans and rice for dinner.

The article says it reduces the soluble fiber in the beans by 60%. I don't get it.

You can obtain the same effect if you soak the beans overnight, dispose of the water, and then use fresh water to cook them.

Sounds like the beans are being pre-digested by the bacteria and all thats left for us is the flavor.

Nah, the bacteria just give you a head start on digesting the fiber. So you can digest it easier less of it makes it to your lower intestine unchanged for those little buggers to turn into gas.
