But where is the side button from the stock switch? Is it just tucked away ander the metal and hard wired "on"?

All of the lights pictured with the exception of the Pewter HID have tailswitches as shown in 2 of the above pictures.

yeah I know that's why I'm asking - what happens to the stock switch when you fit the tailcap switch and shorten the body, is it completely removed and replaced by something else or is it still in there but covered up with the tube?

There is no part of the stock switch in the lights with tailcaps. A new battery contact / bi-pin holder is installed in these particular lights.
