Venison recipes?

It's that time of the year again, when the freezer is rapidly filling with deer meat. It looks the wife and I will be eating a lot more venison this year than in the past, so I'm looking for a few new recipes (and the simpler the better, haha!).

So... what's your favorite way to cook venison???

I use any recipe that calls for beef. Simply substitute beef for venison.

Try some chops marinated for a couple of days in "Italian" salad dressing. Then throw it on the grill.

Take the "backstraps" in one long piece of meat, then you can cut them into steaks. Once you do that, use an old-time meat tenderizer -- looks like a hammer with teeth -- and beat them until they're totally tender. Soak them in a bowl of milk overnight, dip them in flour and fry them up in a skillet the next day.

I always liked boning out a ham and smoking it overnight using a rub and packing in garlic cloves throughout by making small slits in the meat.

Doesn't much simplier than that.
