Does the standard, assembled McE2s fit an SF Z68?

Welcome to CPF! There is a wealth of info in the wonderful McGizmo Aleph series products at the link below. If you scroll to the info on the McE2s it states that it will fit both Z52 and Z57 tailcaps, and if the Z68 uses the same internal switch as the Z57 then it should fit as well. From the underside my Z57 switches looks the same as my Z68 switches, and from the top side all use what appears to be the same retaining ring, so I think that it should fit. If you are interested in knowing more about the Aleph series this thread makes for good reading!
