Anyone with baking experience?

My family is planning on opening a small bakery in conjunction with a bulk food store. We are looking for suggestions on brands to get/not get for new/used equipment

Convection oven
20-30 qt mixer
sheeter
any other "must have" eqipment?

It's been too many years for any expierience I have to count, but the one never-fail 20-30 mixer was always a Hobart back then ... /ubbthreads/images/graemlins/grin.gif

We are leaning towards a Hobart. Saw a 60 qt model from the 50's still working /ubbthreads/images/graemlins/ooo.gif not a piece of plastic on it. A bakelite handle /ubbthreads/images/graemlins/smile.gif

Hobart is still king of the hill. They make great welding machines also. It's the same company as KitchenAid. I almost got a 60qt at an auction for $30 but for one other person bidding against me. I ran it up to $150 before I quit.

I'll echo my experience with Hobart mixers here...get one, and you shouldn't be sorry. I know they make great mixers and dishwashers for commercial use.

OK we all agree on Hobart for mixers how about ovens? Convection or otherwise? Vulcan, Doyon or something else?

I was going to say Hobart even though I have no commercial equiptment experience. WE have a Kitchenaid that's older than I am and I think the only thing we've ever done to it is put in some new motor brushings. It just won't stop!
