What's the best way to shim an MCPCB?

I'm swapping out a 2mm MCPBC with another one but is 1mm only. Need to bring it up to 2mm to maintain LED focus.

Any thoughts? I was thinking of clamping the 1mm MCPCB onto a 1mm copper sheet with epoxy in between...

IMO, the best option would be to reflow the LED. If that's not possible, copper shim+thermal glue would be the next best option.

Or get a Nichia 219 from Illumination Supply, they are mounted on a 2mm MCPCB.
