Reconditioning, what's the best way?

I have a Frazee Chef's knife that has some staining, and I'd like to get it back to looking new. I don't know much about all the different blade steels but the info for this one can be found on the card in the pic. Any help would be appreciated, thank you.

depends on the steel... not sure what 07 is
if its just light staining there are many metal polishes that would work
if the stains are deeper or corroded
you can try 1200 grit on a flat (rubber) block and see if it cleans up
if not then go to 800 grit etc
if you know a local mker ask him to clean it up maybe with a scotchbrite belt or cork belt on a linisher

main point to remember is don't get it hot and don't cut yourself handrubbing it

I am going to go in a different direction and suggest you force a patina on the blade so acidic products will not have an effect on the surface. Keeping a work knife free from stains and discoloration would be an exercise in futility You may or may not be aware that "patina" is corrosion/rust treatment to forestall further degrading of the blade surface.I use mostly carbon steel kitchen knives that are a deep black color from the patina I forced with lemon juices and potatos.
