I've been trying to get a setup where when I flip the switch on a lamp fixture, it would turn the white lights off and amber lights would be turned on. I'm asked to do it for a green house and some chicken coops.

Don't ask why...I was just asked to see if I can do it for him. I was thinking of running a couple XP-G in NW for the white and WW for the amber color but cannot figure out how to setup a switch that'll cut-off the NW and leave only the WW on. Was thinking of running them on two separate drivers and an electrical flip switch.

Id go with two separate drivers and one of these seems the simplest method to me.
You might even get away with one driver and the on-off-on switch between the driver and the LED but i dont know if thats do-able

Any 3-way switch should work as long as it can take the amps
