Beam pattern.

Batwing (low dome) is more of a flood, while Lambertian (high dome) is more of a spot. The difference isn't really that big for just a bare emitter, but it is very obvious when the emitter is used with optics like the NX-05. I'm not too sure about the differences in reflectors, as I've never seen a low dome in a reflector other than the McFlood.

Side emitters are totally different. They have a little inverted cone on top of the die and emit most of their light out the (you guessed it) side. This makes them effective in reflectors, but they don't work at all with optics, at least, not any that are currently available.
