I am looking at getting an LED torch which uses AA batteries. I have a lot of rechargeables which I would like to use. In particular I am interested in this torch.

Will it be safe to use with 2500 mah NI-MH rechargeables or do I risk damaging the torch?

I dont see why it would hurt.
I have a LED/bulb/fluorescent mix torch using NiMh with no problem at all.

I use Ni-MH C & D cells in all my full size lights with no problems.

Yep, better prepare for that one! Some of the hot items right now IMHO are:
McGizmo's PD
Fenix L1P group buy
JilLite 2CR
That should provide some inspiration as to what light to get next.
Of course there is always the Aleph series.
Check also http://www.flashlightreviews.com/ with the Throw and Output charts.

If in doubt "buy both" !!
