Does anyone know where I can find information about cable glands, the various types available, and how best to install them? I don't know much about them except what they do, and I need to know more about them so I can use them in a build I'm hoping to do.

I just learned about these as well in making a bike light.

I know BatterySpace has one model:

There really isn't much to it. You have to drill the hole to mount it, then run your wires through, and tighten the cap down. It compresses a rubber sleeve down around your wires. Supposed to make it watertight supposedly.

I think Mouser and some other electronics parts places carry them as well.

Yeah thats about it.

Just make sure you install it on a flat surface to effect a good seal.
Also if you are installing it in something thick such as a canister lid for a dive light you may have to cut a thread in the lid.
They also come in different pressure ratings.
Most are IP68 but what you really want is IP68 10 bar rated ones.
