Looking at picking up one of these lights. How much benefit does the 8a buck offer? I’m aware it has the ability to make the light very hot and I will be responsible with it. Anyone running it with this set up? I’m thinking the SFT40 in 3000k as I like warmer light.

Benefit relative to the 5A buck driver?

The 3000k 95 CRI SFT-40 should be used with the 5A driver because it is only rated for 4A drive current. The higher CCT low CRI versions can be run at 8A, in which case the difference between 5A and 8A is 37% more lumens for >60% more power input. For brief bursts of turbo, you might want all the output you can get.

Since the modes are expressed as percentages of maximum output, the 8A driver would have a higher low mode.
