Incandescent lights use a small bit of wire inside a glass vial - the wire heats up and starts to glow when a current is passed through it -
Leds come in a few varieties - from standard little 5mm ones to 1,3 and 5 watt luxeon stars (im not too sure how they work though)
Normally a incandescent beam is yellowish white and has a tight hot spot and a bit of a spill beam
the Leds normally have a much larger, dimmer hotspot and are more useful for an area light (they are also very white - almost blue)
