I have a few knives that I've always sharpened with a stone, but I can never get the kind of edge I'm looking for. My friend has a Lansky with the diamond stones and and this puts a good, consistent edge on my knives, but it is kind of awkward to use with large knives.

What are my options for a decent sharpener under $75?

I find the easiest to use for keeping an edge is the Spyderco 204. Note that this is to keep a good edge. These go for ~ $60 list. I don't want to spend the time to reprofile or get an edge from a dull knife with the 204. Pretty easy to use with longer knives.
I do like the Lansky to reprofile or dull edge sharpen. With the Lansky I use DMT coarse and fine. When you've practiced a bit long knife lengths aren't much of a hassle.
Leather strops with rouge are easy and very effective for all sorts of lengths. Old leather belts afixed to a wood base with various grit pastes are an effective means to sharpen long or short blades.
Sandpaper attached to a mousepad material puts an edge on various lengths also.

I'm a newbie to knives (just started and it's changed quite a bit from when I was a kid) and I just got the 204 based on recommendations like this one. I'm not disappointed. I grew up using an oilstone and what a difference the 204 is. It took me 2 or 3 sharpenings to get the "feel".

You can't go wrong with the 204 and you can get them for less than $45 (not including shipping).

Definitely the Spyderco Sharpmaker. I love mine. Much easier to use and better results than the small stones I used as a kid.

I've been using it for about 8 years and all my knives can shave the hair off my arm. /ubbthreads/images/graemlins/thumbsup.gif
 
All my knives are sharp enough to shave hairs. I use a plain arkansas stone. Technique is everything. Years back a fellow from Joe's knife shop, Jackson Hole taught me the method. (thank you Joe!)
