Novices should not overly extrapolate the following data to other samples. There is potentially great variation between samples.
For what it is worth, here is the forward current vs forward voltage for a 1W luxeon Cyan side emitter that is currently on my workbench. This is a Star configuration. At the higher current levels, voltage readings were taken before reaching thermal SS so final readings would be slightly lower at thermal SS.
If(mA)** Vf(V)
10******2.33
20******2.42
40******2.53
80******2.68
160*****2.85
320*****3.07
480*****3.20
640*****3.27
BTW, every Luxeon that I have tested to date has had Vf on the low side of the datasheet "typical" value.
