I came across a b&m knife shop that carries a small selection of SureFire flashlights. They had a gun-metal E2E and E1E on display. I rarely see these. Are these collectible or are they readily available? Should I grab them while I can?

They are pretty common, but majority prefers the HA-III (Natural Gray/Greenish) finish of the E1e and E2e. Mostly attributed to strength of finish. Satin Grey or Gun Metal is more prone to blemish and scratch.

Now, if you can find E1e or E2e in HA-BK (Matte black), then they would be the holy grail(s) for a collection.

The GM (now called SG) finish isn't in production currently (AFAICT), but there were quite a few made. You can find them on ebay occasionally for about the same price as a HA model.
