Why do schools in Texas only teach Driver's Education classes on Monday, Wednesday and Friday?

Because they use the cars for Sex Education on Tuesday and Thursday.

It's probably a gradual approach, sort of like back in the 1960's when Sweden shifted from driving on the left side of the road (like the U.K.) to the right side (like the rest of the continent.) To assure a smooth, gradual transition automobiles switched to the right side on August 17, 1967, and busses and trucks changed over the next day,
August 18.
