I recently read about plotting coordinates on a map using UTM (Universal Transverse Mercator). I'm really new to map reading etc. and would love to know more about it. Has anyone here ever used this method and are there any good websites where i could learn more? Also, whats the main difference between using UTM as opposed to Lat/Long?

I can tell you from actual work and play field experience (hiking, geocaching, checking boundary lines, nmapping trails) that UTM makes it MUCH easier to locate yourself on a map than lat/lon. I also use a grid guide from http://www.lat26inc.com/ with my gps which also helps a lot.
