Does it follow that two Eneloop AA's with at least 2000mAh will last longer in a 2xAA flashlight compared to a flashlight running off one 3000mAh 18650 battery if lets say they are set on the same output level? 😕

No, a 18650 has higher voltage and will contain more energy, a rough estimate is:
18650: 3.7 volt * 3 Ah -> 11.1 Wh
2xAA NiMH: 2 * 1.2 volt * 2 Ah -> 4.8 Wh
