I was wondering if anyone could suggest a good reliable driver to power one of these http://www.luxeonstar.com/Cool-White-7-LED-Assemblies-s/235.htm at 1000ma Dimmable off of 110VAC

Please explain what kind of 'dimming' you are trying to do.

The Xitanium is over-priced and not built nearly as rugged as Mean Well's and others.

I need to be able to adjust the intensity of the light as needed.

As previously mentioned, Meanwell has a lot of different drivers that are dimmable, and are generally reasonably priced, especially when compared to the Xitanium line. Thomas Research/Inventronics also makes a great line of dimmable drivers, even with higher output voltages for longer series strings of LEDs. Most of these drivers use an analog (0-10v) or pwm signal to dim. If you need something that can be dimmed via a triac dimmer (standard wall lamp dimmer), then there are options for that too, albeit with fewer options in output current and voltage. Defining how you want to dim the drivers, and what your desired drive current is will help us guide you to a driver that will fit the bill. If you have a size/space requirement, then list that too.
