Can your multi-sink be used for a single LED? Would I just have to fill the center hole with something and drill two new holes for the wires?

Sure it can be modified as you like, power cable wire is copper wire, it will be easier to fill the hole.
Did you check H22A heatsinks? It is designed for single led.
