Modding the E1e with an LED is actually a fairly easy mod. If you can build the ecan/esink pill, drilling out the head isn't hard, especially if you have access to a drill press.
I would recommend building the pill with one of the MadMax converters. The MM line of converters generate much less heat than the BadBoys do. With the BB, it will get pretty toasty, even at a 400mA bias. I (and lots of others here) have done many of these.
I wouldn't recommend this mod for an E2e body, becasue there are many better alternatives; but this mod on an E1e transforms the somewhat anemic E1e into a truly useful flashlight.
All you need to do it use an esink/ecan to build the pill with your choice of luxeon and converter. Then you drill out the center post of the E1e head with a 13/32 (I believe) drill (gotta get it straight) and voila. Some have done the drilling by hand using a hand drill and vice, but I would recommend doing it in a lathe or drill press.

Well, heck - a new head is easy. If you REALLY don't want to mess with the stock head, you just need to chose the Aleph head you want, choose a BB to your liking, and you're on your way. Don has some sticky threads that point to his sale items. You just want a built Aleph head.

Like Chop has suggested, for a modification of the E bezel itself, you can go with an E-can/E-sink and use the existing reflector. You can also go with a LE and so17xa reflector in the modified head. As Darell has suggested, if you want a new head completely, you can go with an Aleph or probably the most cost effective solution is to get a KL1 head.

can't find the E-Sink

The LE is a Light Engine that consists of an E-screw and ES-Can. To use it in an E bezel, the E bezel is bored out with a 3/4" bit and the threads in the head are chased with a 13/16" tap and extended deeper into the head. This allows the E-screw to thread into position. Think of it as a threaded E-sink.
Below is a shot of one that I made for a Porsche mod:

Oh! And you said two levels, so don't for get the McGiz tail cap as well.
Don made a good point about the KL1 head as the easiest solution... but still get yourself a two-stage switch! Hight recommended.

I think you will find that you need to replace the stock thick pyrex window with a thin mineral glass one for enough room for the so17xa. This is what I did in a couple of these mods. I haven't had time do do any of these and they require more labor than just building an Aleph head so I suspect that when I get around to pricing these myself, an Aleph head will be less expensive. It's still a good viable option though for other modders and DIY.
