I recently saw a video about old leclanche batteries that were user maintained. My question is if I get some small diameter zinc rods and some ammonium chloride, would I at least theoretically be able to rejuvenate a lantern battery?

I suppose I might get an answer if I say it's a modern 6v lantern battery with 4 f cells. These are zinc carbon with a layer of zinc surrounding the carbon and something like ammonium chloride. As the F cells produce electricity the zinc and paste are used up. These battery holders are pop-off tops, not welded shut. There is enough space for at least one zinc rod per battery. This isn't about saving money, but might be useful as a long term battery storage solution
