Hi guys,

I know of a few lights that "ramps" up by twisting the head, such as nitecore SR3 and a few other nitecores. What other brands and models are available out there?

There's the Jetbeam RRT series, Eagletac M series, the new Sunwayled M series, Surefire U2, and a bunch of others.
Use the search feature, all those options and hundreds more came up just by searching "control ring" on the CPF search box, as well as several other threads asking the exact same question.

My Fenix TA30 does that, think the others in the TA series do so as well. Runs off 2x17500s (or 3xCR123s) and is a VERY tough light (bright too).

great! that was just the search term i was looking for :D

Is there any control ring that allows to control the speed of the ramp-up/down ?
Something like:
Turned completely to one side for fast ramp-down, other side for fast ramp-up.
Turned slightly to one side for slow ramp-down, other side for slow ramp-up.

The rings controls the brightness directly:

Turn completely to one side for low/off, other side for for high (or past high to strobe).

There are no ramping involved with it.
