I'm hoping ths will be fairly simple.... I've got one of these..
Cree XR-E R2 (WG) Emitter on Premium Star
and I'll be powering it with a single 2500mah 18650 battery. Can anyone tell me what I need to put between them? I need max brighteness and two hours usage.

I don't necessarily need too many modes, in fact I'd be happy just connecting a resistor.

Can anyone recommend a resisitor value, or indeed a suitable driver?

Max brightness will most probably be achieved when driven between 1000mA and 1300mA with good heat sinking. A 3x7135 or 4x7135 driver on a single LiIon will do. You will unfortunately not get 2 hours runtime. Closer to 1 or 1.5 hours on that battery.
 
Many drivers to chose from ..

Most are regulated to 1A to the LED , so depending on how good the driver is , [ efficient ] . you might measure 1.2 to 1.4A at the tail .

This will give you close to 2 hours .
If you want the output regulated a Buck boost driver might be the go .
The one from KD offers 3 different settings , Hi - Med - Lo / hi - med - lo - strobe - sos / or hi-med-lo-strobe-beacon-sos-slow strobe / I just run mine on the first one [ Hi-Med-Lo ]

KD also has a 1A 2 mode driver if you dont want to many modes .

I'm direct driving an R2 WH from an 18650. it starts of at 1600ma and progressively reduces, I need maximum brightness but only for short periods so this works well,
I'm guesing it would run for a couple of hours because as the voltage drops so does the current however so will the brightness
